San Rafael recently welcomed Drake High School graduates Carroll Oliver and Mike Heffernan’s intimate wood-fired pizza restaurant/bar from within its borders – previously housing Vin Antico.
Chefs from Pies of Art create dishes inspired by art and culture, from Warhol cheeseburgers to Raphael pizzas featuring Spanish chorizo, capers, and olives. In addition, their focus on sustainability means prioritizing locally grown ingredients is paramount.
Raphael’s restaurant uses four ovens for baking pizzas daily. Raphael must decide how many to use daily based on his long-term production costs and several workers employed each week, and by his lease agreement which limits changes in the short term. Once pizzas have been baked in Raphael’s ovens they are then delivered directly to customers who ordered them.
